Season to taste with salt and pepper. Used sun-dried tomato vinaigrette if available.

Recipe Ingredients for Mom's Bean and Barley Soup

1/4 cup vinaigrette
2 cups black beans, canned, drained
2 cups tomatoes, diced, with juice
32 ounce water
1/2 c. onion, chopped
1/2 cup barley, uncooked
1/2 teaspoon dried basil

Recipe Directions for Mom's Bean and Barley Soup

Cook onions in vinaigrette, then add all other ingredients except barley. Bring to boil, stir in barley, simmer 30 - 40 minutes until barley is cooked.
