I altered this recipe from Better Homes and Gardens to be lower in fat and calories. It's yummy.

Recipe Ingredients for Mom's Banana Bran Muffins

3 cups flour
2 cups wheat bran
5 tsp baking powder
1/2 tsp salt
2 eggs, beaten
1 1/2 cups nonfat milk
3/4 cup brown sugar, packed
1/2 cup apple sauce, unsweetened
1 1/2 cup banana, mashed
3/4 cup chocolate chips

Recipe Directions for Mom's Banana Bran Muffins

  1. Preheat oven to 400*

  2. Combine first 4 ingredients in a large bowl. In a separate bowl combine next 5 ingredients. Stir wet ingredients into dry just until all is moistened. Fold in chocolate chips. Bake for 15 to 20 minutes until golden. Remove from pans, may be served warm.

  3. Makes 24 muffins.
