So, so good. The perfect ratio of fruit to topping. Rhubarb not measured, but for future reference, use an 8x8 pan and cover the bottom with a 1/2 inch or so layer of fruit. This recipe works with pretty much any fruit. If you're using a sweeter fruit omit the white sugar and if you're using frozen fruit, omit the water.

Recipe Ingredients for Mom's Awesome Rhubarb Crisp

2 cups rhubarb
3/4 cup sugar
2 tbsp water
1 1/2 cup oats
2/3 cup flour
2/3 cup brown sugar (packed)
1/4 cup margarine

Recipe Directions for Mom's Awesome Rhubarb Crisp

  1. Grease an 8x8 glass pan and arrange fruit on bottom.

  2. In a separate bowl, combine oats flour and brown sugar.

  3. Cut in margarine until mixture resembles coarse crumbs.

  4. Sprinkle crumbs over the fruit.

  5. Make at 375F for about 35 minutes or until fruit is tender.

  6. Serve warm, great with ice cream, or greek vanilla yogurt.
