Recipe Ingredients for mom's apple pie

2 c flour
2/3 c shortening
2 tbs shortening
1 tsp salt
6 c apples
1 tbs smart balance light
1/2 c sugar
3/4 tsp cinnamon
1/4 tsp vanilla

Recipe Directions for mom's apple pie

  1. stir together flour and salt. add all shortening and water one tablespoon at a time, blending with a pastry blender until the crust holds, but is still crumbly. divide in half and roll into bottom and top crusts.

  2. peel and slice apples to make 5-6 cups. add sugar, cinnamon, nutmeg/vanilla and a dash of salt. place in bottom crust (insert pie bird before apples if using to vent). drop butter or margarine on top of apples in small bits (aprox. 1/4 tsp). place on top pie crust and cut vents (if necessary).

  3. to cook, microwave for 10-12 minutes or until the apples are soft when pierced with a fork. then transfer pie to a 400 degree oven and bake for 12-15 minutes or until golden (depends on oven temp). Allow to cool slightly before serving. and enjoy!
