Roll up the roulades the night before, and refrigerate.

Recipe Ingredients for Mom's 21st Century Roulades on Mashed Potatoes

8 oz turkey, cut into 4 slices
4 oz fresh mozzarella cheese
1/4 c fresh basil
4 t olive oil
1 lb potatoes, unpeeled
4 T olive oil
1 salt and pepper

Recipe Directions for Mom's 21st Century Roulades on Mashed Potatoes

  1. Place turkey slices (or scallopines) in a baking dish. Sprinkle with minced mozzarella and add a few basil leaves and a drizzle of olive oil. Roll each scallopine and secure with string or toothpicks. Refrigerate.

  2. Warm the oven to 400 degrees and bake 20 -25 minutes. Meanwhile, cut up the potatoes, boil for 20 minutes, then mash and add salt, pepper and olive oil to desired taste and consistency.

  3. Serve the turkey roullades on top of the mashed potatoes. If needed, drizzle olive oil, and add fresh basil.
