A delicious pureed soup. Warm and smooth. Great with crusty bread for dipping.

Recipe Ingredients for Molly's White Bean and Leek Soup

1 lb dry great northern beans
2 chopped leeks (white/light green parts only)
1 tbsp minced garlic cloves
16 oz chicken stock
16 oz water
1 tbsp salt
1 cup heavy cream
1 tbsp butter
2 tsp olive oil
1 tsp black pepper

Recipe Directions for Molly's White Bean and Leek Soup

  1. Cook presoaked dried beans in chicken stock and salted water until tender. At least 2 hours. Skimming the foam if necessary.

  2. Saute chopped leeks and garlic cloves in olive oil and melted butter until slightly tender. Then add sauted mixture to beans. Simmer for and additional 30 min to one hour.

  3. Puree soup in blender in batches until smooth. Careful! Hold on to top of blender with towel so you don't get burned.

  4. Return puree to pot and add cream. Taste for seasoning. Add Salt and Pepper as desired
