Very tasty, healthy soup that freezes well and is quick to throw together, even at the end of the day. Most of the ingredients can be kept on hand for an "emergency" meal. Great for potlucks.

Recipe Ingredients for Molly's

12 oz chicken breasts, cubed (appx. 2 breasts)
1 medium onion, diced
1 tbsp olive oil
3 cups cooked great northern beans (24 oz jar)
2 fresh chili peppers, diced (or 4 oz can)
1/2 cup canned tomatoes (Rotel 4 oz can)
1 3/4 cups chicken broth (14 oz can)
2 garlic cloves
1 tsp cumin
1 tsp oregano
1 tbsp cornstarch
1 t cayenne pepper (or more depending on taste)

Recipe Directions for Molly's

  1. Saute chicken and onion until chicken is done and onion transparent.?

  2. While that's cooking, mix the remaining ingredients in your crock pot or soup pot. (Rinse off the beans before adding them).?

  3. Add chicken breast and onion to bean mix in crock pot when done. Season to desired "hotness" with with the cayenne pepper. ?

  4. Put crock pot on high and let cook for at least 1 hour. Make sure the mixture boils so that the cornstarch can thicken up chili. Add water to thin, if needed. Garnish with sour cream, tortilla chips, shredded cheddar and/or chopped parsley (not in calorie count - you'll have to add). Serve with cornbread for a complete meal. ?
