Mole poblano sauce. Really good over turkey. Can be made vegetarian/vegan by using vegetable stock and olive oil or crisco for the lard

Recipe Ingredients for Mole sauce

12 Pepper, Ancho, Dried
3/4 oz paprika
2 cups chicken stock
3/4 cup blanched almonds
1 cup Onions
3 medium tomatoes
1/2 cup seedless raisins
2 tablespoons sesame seeds
51 g Mission Foods, Mission Flour Tortillas, Soft Taco, 8 Inch
1 teaspoon garlic
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon Spices Ground Coriander
1/2 teaspoon anise seeds
1 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons lard
2 cups chicken stock
1 1/2 oz Baking Chocolate, Unsweetened, Squares

Recipe Directions for Mole sauce

  1. Deseed peppers and shred into small pieces.

  2. Soak peppers in 2 cups boiling chicken stock for 30 minutes.

  3. Pulse almonds until they form a coarse meal.

  4. Blend everything except lard, 2 cups stock, and chocolate in a blender (or use an immersion blender.)

  5. Add lard to mixture, and bring to a simmer.

  6. Stir constantly for 5 minutes.

  7. Add chocolate and remaining stock.

  8. Return to a simmer, and cover.

  9. Simmer a minimum of 30 minutes, stirring occasionally.

  10. Serve over meat, beans, or as a dip.
