This is a small-volume recipe for a dark, firm yeast bread, intended to form and bake into three small loaves for serving as a snack or breakfast bread; good nutrition, no cholesterol. Chewy and full bodied. Allow about 4 hours preparation time, from start to finish (three risings and waiting in between before baking).

Recipe Ingredients for Molasses Whole Wheat Yeast Bread

3 grams (1/3 packet) yeast, Red Star active dry yeast
3/4 cup warm water
2 tablespoons molasses (Plantation brand Organic Blackstrap Molasses, unsolphured)
2 teaspoons margarine (Smart Balance original), softened
1/2 teaspoon salt
2 cups whole wheat flour (stone ground)

Recipe Directions for Molasses Whole Wheat Yeast Bread

  1. In large mixing bowl, place in order given all ingredients EXCEPT flour.

  2. Add flour gradually to make a stiff dough.

  3. Knead on well-floured surface until smooth and satiny, 8 to 10 minutes.

  4. Place dough in greased bowl.

  5. Cover; let rise in warm place until doubled (in volume/size], 1-1/2 to 2 hours.

  6. Divide dough in thirds; shape into balls.

  7. Cover with bowl; let rest (covered) for 15 minutes.

  8. Shape into three loaves.

  9. Place in well-greased small loaf pans (I used pans of 3"x6"x2" size)

  10. Cover; let rise until light and doubled (in size/volume), about 1 hour.

  11. Bake at 375 degrees Fahrenheit for 30 to 35 minutes, or until deep brown and toothpick inserted into center of loaf comes out dry.

  12. NOTE: Be careful not to overbake (burn) as these pans are small and it is hard to see visual changes with this dark bread. Watch for texture changes of crust. Sliced thinly, these little loaves make a nice snacking bread with cheese slices, maybe some mustard for zip.
