Milled Flax Seed can fat in a 3:1 substitution ratio. Note: when flax seed is used instead of oil, baked goods do tend to brown more rapidly, so slight adjustments in time or temperature might be required

Recipe Ingredients for Molasses Sugar Cookies - Lower Fat,Higher Fiber/Protein

1/2 cup shortening
3/4 cup milled flax seed
1 cup sugar
4 tbsp molasses
2 egg whites
2 cup flour
1/2 tsp ground cloves
1/2 tsp ground ginger
1 tsp cinnamon
2 tsp baking soda
1/2 tsp salt

Recipe Directions for Molasses Sugar Cookies - Lower Fat,Higher Fiber/Protein

  1. Melt shortening, cool. Pour into large bowl. Add sugar, molasses and egg. Beat mixture.

  2. Sift flour, baking soda, cloves, ginger, cinnamon and salt.

  3. Beat slowly into wet mixture. Chill.

  4. Form 1" balls and roll in granulated sugar. Place on cookie sheet 2" apart.
