Dense, flavorful muffin that's sweetened only with molasses. Bran flakes, Wheaties, or other whole grain cereal flakes can be used in place of Total.

Recipe Ingredients for Molasses Cereal Muffins

1/2 cup all-purpose flour
1/2 cup whole wheat flour
1 1/2 teaspoons baking soda
1/4 teaspoon salt
1 1/4 cups skim milk
1/2 cup molasses
1 egg, beaten
2 tablespoons vegetable oil
2 cups Total cereal
1/2 cup raisins
1 teaspoon vanilla (optional)
1 teaspoon allspice (optional)
1 teaspoon cinnamon (optional)
1 teaspoon powdered ginger (optional)

Recipe Directions for Molasses Cereal Muffins

  1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 12 cup muffin pan.

  2. In a medium bowl, sift together flour, baking soda, and salt.

  3. In a separate medium bowl, mix skim milk, molasses, egg, and vegetable oil. Mix in the cereal and raisins. Thoroughly stir in the flour mixture. Transfer to the prepared muffin pan.

  4. Bake 20 minutes in the preheated oven, until a knife inserted in the center of a muffin comes out clean.
