Bran muffins packed with good stuff. Can add any nuts and/or dried fruits you like.

Recipe Ingredients for Molasses Bran Muffins

1 cup wheat bran
1 1/2 cups whole wheat flour
1 cup ground flax seed
1 cup raw wheat germ
1 tsp baking powder
1 tsp baking soda
1 cup milk
1 cup plain nonfat yogurt
1/2 cup tahini
1/2 cup molasses
1/2 cup honey
1 tsp cinnamon
1/2 cup walnuts
2 tbsp safflower oil
2 eggs

Recipe Directions for Molasses Bran Muffins

  1. Preheat oven to 400.

  2. Combine all dry ingredients. In a separate bowl, combine all wet ingredients. Add wet to dry and stir until just moistened.

  3. Spoon into greased muffin tins (or paper muffin cups). Bake for 15-20 minutes.
