Recipe Ingredients for Mojo Chili Vegetable Fajitas

2 teaspoons grated orange peel
1/2 cup orange juice
1 tablespoon lime juice
1/3 cup olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon chili powder
1 tablespoon garlic
3 bell peppers, sliced
1 large red onion, sliced
1/2 pound portabella mushrooms

Recipe Directions for Mojo Chili Vegetable Fajitas

Mix first 8 ingredients in a food processor until smooth. Add to sliced vegetables and marinate 15 minutes to 2 hours, turning occasionally. Grill over medium-heat in grill rack or saute on stove in pan sprayed with non-stick spray. Serve on warm tortillas with cheese, sour cream, salsa (calories listed for veggies and marinade only)
