Recipe Ingredients for Moist and Tender Extra-Lean Turkey Meatballs

1 1/4 lb Ground White Turkey, 98% Fat-free
6 garlic cloves, minced
1/2 onion, grated
1/2 cup minced mushrooms
1/3 cup oats, (oat bran)
2 tbsp ground flax seeds
2 egg whites
1 tbsp. Worcestershire sauce
1/3 cup cheese, Romano grated
1 tsp. nutmeg
8 oz. frozen spinach, drained really well
56 ounce diced tomatoes, 2 28 oz cans
4 garlic cloves, medium, minced, ( or pressed through a garlic press - about 4 teaspoons)
1 tablespoon tomato paste
1 teaspoon olive oil
1/8 teaspoon red pepper flakes
1 tablespoon minced fresh basil leaves
3 ounce Parmesan cheese

Recipe Directions for Moist and Tender Extra-Lean Turkey Meatballs

  1. In a large pot over medium heat, simmer a big pot of Simple Tomato Sauce

  2. In a large bowl combine turkey, garlic, onion, mushrooms, oat bran, flax seeds, Worcestershire, cheese, nutmeg, egg-whites, spinach, salt and pepper. Work it together until everything is well combined. Smell it? maybe you want to give it a hit of red pepper flakes or a shake of Oregano? do what you like? make it yours.

  3. For Simple Tomato Sauce:

  4. Pulse the tomatoes in a food processor until mostly smooth, about ten 1-second pulses; set aside. Cook the garlic, tomato paste, oil, and pepper flakes in a medium saucepan over medium heat until the tomato paste begins to brown, about 2 minutes. Stir in the pureed tomatoes and cook until the sauce is thickened and measures 2 cups, about 20 minutes. Off the heat, stir in the basil and season with salt and pepper to taste. Cover and set aside until needed.

  5. Per Serving:

  6. Take about two tbsp. of meat mixture and form into a ball about the size of a golf ball you should have 18 meatballs when you're done. Once you form all of your meatballs, one-by-one drop them into the simmering sauce.

  7. Allow them to cook forty-five minutes to an hour.
