chocolate cake made with mayonnaise instead of eggs and with a quick chocolate fudge frosting.

Recipe Ingredients for Moist Chocolate cake w/quick Fudge Frosting

2 cups all-purpose flour
2 tsp baking soda
1/2 cup cocoa
1 cup sugar
1 cup mayonnaise
1 cup water, lukewarm
1 tsp vanilla
1 cup sugar
4 tblsp cocoa
4 tblsp butter
1/2 cup non-fat milk
2 tblsp light corn syrup
1/4 tsp salt
1 1/4 cup confectioners' sugar
1 tsp vanilla

Recipe Directions for Moist Chocolate cake w/quick Fudge Frosting

  1. Mix first 7 ingredients together well

  2. Pour into a 13 x 9 inch cake pan, greased.

  3. Bake at 350 for approx. 25 minutes.

  4. For frosting:

  5. mix sugar & cocoa in saqucepan

  6. add butter, milk, corn syrup & salt

  7. Heat to a rapid boil, stirring frequently

  8. Continue boiling vigorously for 3 minutes, stirring occaqsionally.

  9. Cool.

  10. Beat in the confectioners' sugar & vanilla til of desired consistency, add slightly more conf. sugar if necessary.
