Nigerian Traditional dish made from pureed black eye beans.

Recipe Ingredients for Moimoin (steamed beans puree)

1 cup beans,soaked & skin off
1/4 cup tomato paste(optional)
2 cups water
1 tsp salt
2 Eggs,small boiled(optional)
1/4 cup onions, diced
1 tsp cayenne pepper

Recipe Directions for Moimoin (steamed beans puree)

  1. Soaked dry beans until soft.Wash and remove skin.

  2. Put washed beans ,onions,pepper,tomato paste in a blender.

  3. Add water gradually and blend all together to a consistency not too thick and not too watery.

  4. Pour mixture in a mixing bowl.

  5. Add salt and seasonings(as preferred) to taste.

  6. Add diced eggs and stir gently.

  7. Pour about one cup each in small 8 oz aluminum cup.

  8. Arrange all cups in a very large pot with hot water about 1/4 of the pot.

  9. Cover pot tightly and leave to steam and solidify for about 45 mins.

  10. Check doneness with toothpick.

  11. If it comes out clean , it done.

  12. Leave to cool.

  13. Serve warm.
