Doubled the recipe and used half whole wheat flour and half regular flour. Also substituted splenda for sugar

Recipe Ingredients for Modified zucchini bread

1 1/2 cups all purpose flour
1 1/2 cups whole-wheat flour
2 tsp cinnamon
1 tsp baking soda
1 tsp salt
1/2 tsp baking powder
1/2 tsp nutmeg
2 eggs
1/2 cup vegetable oil
2 cups zucchini
2 cups splenda

Recipe Directions for Modified zucchini bread

Mix flours through nutmeg. In separate bowl mix eggs through splenda. Fold together. Spoon batter into buttered loaf pans. Bake at 350 for 50-55 minutes.
