1 medium potato, grated
1 medium carrot, grated
1 medium zucchini, grated
1/3 cup flour
1 teaspoon black pepper
2 egg whites
3 tablespoons light olive oil

Recipe Directions for Modified Veggie Burgers (Veggie Pancakes)

  1. Combine all ingredients except oil.

  2. Heat oil over medium-low heat in a large skillet. Drop mixture by spoonfuls into hot oil. Fry until brown on both sides.
