Recipe Ingredients for Modified Pinapple Zucchini Bread

1 eggs
1/2 cup applesauce
1 t vanilla
1 cups shredded zucchini
1/2 cup pineapple
1 1/2 cups whole wheat flour
1 t baking soda
1/4 t baking powder
1/2 t salt
1/4 t nutmeg
3/4 t cinnamon

Recipe Directions for Modified Pinapple Zucchini Bread

  1. Preheat oven to 350 degrees.

  2. Mix wet ingredients together in a large bowl.

  3. Sift together dry ingredients then add to wet mixture and stir just until combined.

  4. Pour into greased loaf pan and bake for one hour, or until a toothpick inserted into the center comes out clean.
