Modified lower fat lower sodium orzo salad

Recipe Ingredients for modified orzo salad

3/4 lb orzo pasta
3/4 red bell pepper
3/4 yellow bell pepper
3/4 green bell pepper
4 celery stalk
6 scallions
15 kalamata olives
1/3 lb fat free feta cheese
10 artichoke hearts

Recipe Directions for modified orzo salad

boit 2 qts of water in a medium sauce pan. Add orzo to boiling water. Bring water back to a boil. Lower the heat to medium. Cook for 9 Minutes. Drain the water. Chop all vegetables and olives to confetti size. Cruble the feta cheese. Mix in a large bowl with cooked orzo pasta. Refrigerate overnight.
