From Food Network Magazine, Aari Sequeira's recipe. I used Shape mag's pizza dough recipe for homemade dough.

Recipe Ingredients for Modified Hawaiian Pizza

2 teaspoons minced garlic
2 teaspoons Ginger Root
2 teaspoons canola oil
1/2 teaspoon Kosher salt
1/2 cup tomato puree
1 teaspoon All-purpose flour, for dusting
1 teaspoon Cornmeal, for dusting
1 cup Reduced Fat 4 Cheese Mexican Shredded Cheese
30 pepperoni
1/2 cup chopped pineapple
1 fresh red chile pepper, thinly sliced
4 teaspoon sriracha
1 oz Fresh mint
1/2 cup bread flour
1/2 cup whole wheat flour
3/4 teaspoon active dry yeast
1/4 teaspoon salt
1/2 teaspoon sugar
6 tablespoons water

Recipe Directions for Modified Hawaiian Pizza

  1. For dough:

  2. In a large mixing bowl, combine dry ingredients, then create a well in center and add the water. Using your hands, gently combine cough for about 3-4min. or until it comes together.

  3. Move dough to a lightly floured surface, knead for 10mins. or until firm and smooth. Form into a ball. Cover with a clean dish towel; let rest for 5mins.

  4. Using a rolling pin, roll out dough to form an 11-inch circle; place on a round metal pizza pan with small holes so the dough just reaches but doesn't overlap the edges. let rest for 45mins. before adding toppings.

  5. To freeze dough, cover loosely with plastic wrap immediately after forming it into a ball(don't allow dough to rest) and store in freezer for up to 3 months. When ready to use, remove the plastic wrap, place on a lightly floured surface, cover with a clean dish towel, and defrost for 1 hour before rolling out.

  6. For pizza:

  7. Put a pizza stone or upside-down baking sheet in the oven; preheat to 500 degrees F.

  8. Pulse the garlic, ginger, canola oil and a pinch of salt in a food processor until smooth. Mix 1 teaspoon of the garlic-ginger paste with the tomato puree.

  9. Stretch the pizza dough into a 12-inch round on a floured surface. Put on a cornmeal-dusted pizza peel or upside-down baking sheet; slide onto the hot pizza stone or baking sheet and cook 5 minutes. (If you're using a prepared crust, skip this step.)

  10. Slide the crust back onto the peel. Spread with the tomato puree, then top with the cheese, pepperoni, pineapple and chile pepper.

  11. Return to the oven and bake until the cheese melts, 8 to 10 more minutes. Remove from the oven and let sit 5 minutes, then top with mint and Sriracha.
