Recipe Ingredients for Modified Greek Omelet

1 c. cooked baby spinach
1/2 c. chopped red onion
4 large egg whites
1/4 c. reduced fat feta cheese
1 dash salt
1 tsp basil

Recipe Directions for Modified Greek Omelet

  1. Beat 4 egg whites in a bowl. Add spinach, onions, salt & basil.

  2. Spray pan with non-stick cooking spray and place over medium heat. Add mixture to pan. Cook until it sides bubble then fold egg mixture in half. Cook until right before it begins to turn golden brown on edges. Remove from pan sprinkle with feta cheese and serve.
