Recipe Ingredients for modified grecian quinoa salad

1 cup uncooked quinoa
1 1/2 cups chicken broth
1 tablespoon olive oil
1 teaspoon grated lemon rind
2 teaspoons fresh lemon juice
1/2 teaspoon red wine vinegar
1/2 teaspoon sea salt
1/2 cup cherry tomatoes, halved
1 cucumber, seeded and chopped
1 cup diced red pepper
2 green onions
1/3 cup reduced fat feta
5 kalamata olives, diced
1/2 cup red onion, diced

Recipe Directions for modified grecian quinoa salad

  1. Cook quinoa according to package directions in chicken broth. When finished, fluff with a fork and cool to room temperature.

  2. Combine olive oil with diced vegetables and chopped olives, then stir in quinoa.

  3. Top with feta and season with salt and pepper to taste.
