Recipe Ingredients for modified french lentil soup

2 tbsp oil
5 cups mixed vegetables
5 cups celery, chopped
4 cups carrots, chopped
1 tbsp garlic, minced
8 cups broth, low sodium
3 cups lentils, rinsed and drained
28 oz tomato, diced or crushed

Recipe Directions for modified french lentil soup

  1. In a large stock pot over high heat, saute vegetables and garlic in the oil, 15 minutes, turning regularly.

  2. Add broth, tomatoes, and lentils, bring to a quick boil, then cover and reduce heat to low.

  3. Simmer for at least one hour, but the longer the better.
