Recipe Ingredients for Modified French Breakfast Muffins

3/4 cup flour
1 tsp baking powder
1/4 cup sugar
1 pinch of salt
1/4 tsp nutmeg
1/8 cup smart balance, melted
1/4 cup skim milk
1/8 cup egg whites
1/8 cup smart balance, melted
1 1/2 tbsp sugar
1/4 tsp cinnamon
1/4 tsp vanilla extract

Recipe Directions for Modified French Breakfast Muffins

  1. Mix the first five ingredients

  2. Add the milk, 1/4 cup melted Smart Balance, and egg whites, and stir into a nice batter

  3. Spray a 6-cup muffin tin and fill each cup halfway with batter

  4. Cook at 400 degrees for 20 minutes

  5. When the muffins are done, dip the top in the remaining melted Smart Balance, and swirl in a mixture of the sugar, cinnamon, and vanilla for a nice topping
