Recipe Ingredients for Modified Deen Brothers Low-Fat Eggplant Bake

549 grams Eggplant
3/4 tbsp Coconut Oil
3 cup Spaghetti Sauce Traditional
1/4 cup leaves, whole Basil, Fresh
4 oz Reduced Fat Low Moisture Mozzarella Cheese

Recipe Directions for Modified Deen Brothers Low-Fat Eggplant Bake

  1. Preheat oven to 500.

  2. Peel and cube large eggplant (about 550 g or 3.5 oz ) and toss in 2.5 tsp. oil (can substitute olive oil for coconut oil)

  3. Season to taste with salt, pepper, ground garlic, and herbs to taste. (I add 1 Tbsp. dried oregano)

  4. Place on baking sheet that has been coated with non-stick spray, and roast, tossing occasionally for 20 minutes or until golden. (eggplant will shrink during roasting)

  5. Reduce heat to 425.

  6. Prepare a 1 1/2 quart baking dish with non-stick cooking spray.

  7. Put 1 cup of spaghetti sauce in bottom of dish.

  8. Put cooked eggplant into dish. (I add about 1 cup of fresh cut-up tomatoes for extra flavor and texture)

  9. Sprinkle on 1 1/2 Tbsp chopped fresh basil.

  10. Add 1-2 additional cups of sauce

  11. Place back in oven until bubbly, about 15-20 minutes.

  12. Sprinkle on 4 oz. shredded low-fat mozzarella and put back into the oven for 10 minutes or so.

  13. Makes 5 one cup servings.
