Happy St. Patty's Day! I read the foodblog Simply Recipes and this was the featured article for the day. The original has a ton of butter in the mashed potatoes and then additional butter to serve. Recipe Ingredients for Modified Colcannon Recipe

6 large russet potatoes
1 onion, chopped coarsely
4 cloves of garlic, minced
1/2 head of cabbage
1 cup skim milk
2 tbs butter or margarine
1 Salt and pepper

Recipe Directions for Modified Colcannon Recipe

Peel potatoes and cut into chunks. In a large pot, cover potatoes with water and add a tablespoon of salt. Cook until just fork tender, drain and set aside (you could reserve some of the potato liquid to substitute for part of the milk). In the same pot, melt the butter and then saute the cabbage (cut into small chunks), onion and garlic until the cabbage is just wilted. Add the milk and mix well. Next, add the potatoes and using either a fork or a potato masher, mash the potatoes being sure to mix in the greens. Add salt and pepper to taste. If you so desire, add additional butter when serving.
