A layered, Italian veggie casserole.

Recipe Ingredients for Modified Claire's Tiella

1 lb potatos
1 lb yellow squash
1 lb tomatos
2 tbsp olive oil
1/2 tsp salt
1/4 tsp pepper
1/4 basil leaves
1/2 tbsp garlic powder
1 nonstick cooking spray

Recipe Directions for Modified Claire's Tiella

  1. Oil 2-quart baking dish with straight sides (souffle dish works best).

  2. Preheat oven to 375f.

  3. Layer veggies, starting with potatos

  4. Sprinkle each layer with olive oil, basil, salt, pepper and garlic powder

  5. Continue layering tomatoes and zucchini, repeating layers until all veggies are used (finishing with tomatos).

  6. Drizzle top with olive oil.

  7. Bake for 45 minutes, or until all vegetable juices are absorbed.

  8. Final tiella shoudl be firm and not too juicy; should be able to cut into slices.
