Recipe Ingredients for Modified Cashew Chicken

2 tbsp vegetable oil
4 oz cashews
1 3/4 lbs chicken breast
1/2 lb snow peas
1/2 lb broccoli slaw
1/4 cup low sodium soy sauce
1/2 tsp sugar
1/2 tsp salt
2 tbsp cornstarch
1 cup low sodium chicken broth

Recipe Directions for Modified Cashew Chicken

  1. Slice breasts into very thin 1-inch squares. Place on tray.

  2. Prepare vegetables, removing ends and strings from pea pods. Add with broccoli slaw to tray separate from chicken.

  3. Mix soy sauce, cornstarch, sugar, and salt.

  4. Heat 1 tablespoon of oil in skillet over moderate heat. Add all the nuts, and cook 1 minute, shaking the pan, toasting the nuts lightly. Remove and reserve.

  5. Pour remaining oil in skillet. Fry chicken quickly, turning often until it looks opaque. Lower heat to low.

  6. Add pea pods, slaw and broth. Cover and cook slowly for 2 minutes. Remove cover, add soy sauce mixture and cook until thickened, stirring constantly. Simmer uncovered a bit more and add nuts and serve immediately.
