Black bean mixture to serve over white rice (or any kind of rice)

Recipe Ingredients for Modified Black Beans and Rice

1 tablespoon olive oil
1 onion, chopped
15 ounce black beans
15 ounce stewed tomatoes
1 teaspoon dried oregano
2 cloves garlic, minced
1 cup uncooked white rice
2 cups water

Recipe Directions for Modified Black Beans and Rice

  1. In microwave safe bowl, add rice and water. Microwave on High for 23-24 minutes.

  2. In large saucepan, heat oil over medium-high. Add onion and garlic, cook and stir until tender. Add beans, tomatoes, and oregano and mix. Cover; reduce heat and simmer 5 minutes. Remove from heat; let stand 5 minutes before serving.

  3. Serve black bean mixture over cooked rice.
