1/2 teaspoon vegetable shortening
1/2 cup (100g) avocado, mashed
1/4 cup (51g) sugar
1/4 cup (36g) brown sugar
2/5 cup (69g) egg beaters, original
1 cup (149g) all purpose flour
3/4 cup (100g) whole-wheat flour
3 (318g) bananas, mashed
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (94g) fat-free yogurt, vanilla flavor
2 tablespoons orange juice, squeezed
1 teaspoon oats, optional
1 teaspoon vanilla extract
2 tablespoons flax seed, ground

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5" loaf pan with 1/2 teaspoon of shortening or your favorite low-calorie spray.

  2. In a large bowl, cream together the avocado and sugars. Add the eggbeaters and vanilla, mix well. In a second bowl, mash together the bananas, orange juice, and yogurt. In a third bowl, mix together the flours, baking soda, salt, flax seed and baking powder.

  3. Stir flour mixture into the avocado mixture. It will form a firm, greenish dough but don't worry! It will moisten and lighten up once the bananas are added.

  4. Finally, fold in the yogurt and banana mixture. Spread evenly into the greased loaf pan and sprinkle the top with one teaspoon of oats.

  5. Bake at 350 degrees F (175 degrees C) for 60 minutes or until a toothpick inserted into the center of the loaf comes out clean. Cool loaf in the pan for ten minutes before transferring to a wire rack to cool completely.
