great sandwich salad for vegans. Note that this is only gluten free and sugar free depending on the type of mayo/mustard you put on, so be wary.

Recipe Ingredients for mock tuna salad

2 cup chick peas
2 green onions
1/4 cup celery
1 dill pickle
2 tbsp nayonaise
1 tbsp dijon mustard
1/4 tsp salt
1 tbsp pepper
1 tbsp nutritional yeast

Recipe Directions for mock tuna salad

  1. Mash chickpeas with mayo and mustard to desired texture (I like mine a little chunky).

  2. chop pickles, onions and celery and add to chick pea mix, stir until blended together.

  3. salt and pepper to taste (I like a lot of pepper which is why it's listed as such)
