Recipe Ingredients for Mock Tuna Salad

14 oz Tofu, Extra Firm
2 Celery Stalks, diced
1 green onion
4 tbsp Mayo
3 tbsp Relish
1 tbsp Soy Sauce
1 sheet Nori

Recipe Directions for Mock Tuna Salad

  1. Prep tofu overnight: Cut tofu block in 2 layers, put pieces of nori between each, add 2 tbsp of soy sauce (only so much will be absorbed, hence 1 tbsp in recipe for calorie counting purposes) add seasonings as for fish-- lemon pepper, etc, cover in water in squarish freezer-safe container. Freeze overnight

  2. Thaw tofu. while you're waiting, dice celery and onion, mix with relish and mayo.

  3. When Tofu is thawed, remove from marinade and nori, press liquid out as much a possible, and slice in thin strips lengthwise, squeeze liquid from those and tear into bits (this is the most fish-like texture I could think to prepare it in)

  4. add "tuna" bits to other ingredients and mix together. You can also add a little of the nori for extra ocean-y flavor, but it will LOOK less like tuna salad with black bits in it, FYI.

  5. Enjoy on toast!
