Brown rice and assorted vegetables in a soy and citrus dressing. Serve/eat in squares of Nori, roasted seaweed.

Recipe Ingredients for Mock Sushi Pockets

1/2 cup rice, brown long-grain, cooked
32 g carrots, diced small
26 g cucumber, diced small
93 g bell pepper (yellow), diced small
7 g green onion, minced
5 g radish, diced small
43 g cherry tomato, quartered
84 g avocado, diced small
1 1/2 oz baked tofu
1 T honey
1 T fresh orange juice
1 T fresh lemon juice
2 tsp soy sauce
3 T fresh lemon juice

Recipe Directions for Mock Sushi Pockets

  1. Mix rice and vegetable together in a bowl. Squeeze 1/2 lemon (about 3 T) over mixture.

  2. Combine honey, orange juice, 1 T lemon juice and soy sauce in a separate bowl to make dressing.

  3. Pour dressing over rice and vegetable mixture.

  4. Cut 2 sheets of Nori, roasted seaweed, into 9 squares each. Place a spoonful of the rice and vegetable mixture on a square of seaweed, fold the square into a pocket and eat.
