uses Cauliflower in place of potatoes.

Recipe Ingredients for Mock Potato Salad

8 cups cauliflower, flowerets
4 hard boiled eggs, chopped
1 large onion, diced
10 radishes, chopped
3 stalks celery, chopped

Dressing:
1 cup fat free mayonnaise
2 tbsp ketchup
1 tbsp mustard
1 tbsp sweet pickle relish
1 tbsp Splenda

Recipe Directions for Mock Potato Salad

  1. Parboil cauliflower - cool & drain completely

  2. Mix together vegetables in large bowl and keep chilled.

  3. Mix together dressing ingredients, season to taste and add to vegetables. Keep chilled.

  4. Each serving is 1 cup.
