This is a good substitute for potato salad- without the potatoes.

Recipe Ingredients for Mock Potato Salad

1/2 cup cauliflower
1 tablespoon mayonaise
2 tablespoons chopped celery
1/4 teaspoon onion chopped
1/2 teaspoon apple cider vinegar
1 teaspoon egg
1/4 teaspoon celery salt
1/4 teaspoon dill weed
1/4 teaspoon mustard
1 tsp Splenda

Recipe Directions for Mock Potato Salad

  1. Place cooked, drained cauliflower in a bowl and drizzle with the vinegar.

  2. Sprinkle with the dill weed and celery salt.

  3. Add mayonaise, onion, celery, egg, mustard and Splenda.

  4. Mix well. Chill before serving.
