cauliflower and truffle oil create a tremendous flavor for under fish or meats.

Recipe Ingredients for Mock mashed potatos

1 head cauliflower
1/2 teaspoon salt
1 tablespoon truffle oil
1/4 cup nonfat milk

Recipe Directions for Mock mashed potatos

  1. steam cauliflower til soft.

  2. put in blender, mash down

  3. add 1/4 cup nonfat milk, salt, and truffle oil. I use white truffle oil. I also use sea salt (but you might need to increase the quantity to taste.)

  4. blend thoroughly

  5. I use this as a 'bed' under scallops, fish, a small piece of steak. put the main course on top, dribble a little of the sauce over the edges, and arrange steamed veggies around the side. gorgeous!
