1 tablespoon butter
1 tablespoon flour
1/2 teaspoon salt
1/8 teaspoon pepper
2/3 cups evaporated milk
2 egg yolks, beaten
1/4 cup butter
2 tablespoons lemon juice

Recipe Directions for mock hollandaise sauce-original recipe

  1. Melt 1 tablespoon butter over low heat. Blend in flour, salt, and pepper. Blend in milk and cook and stir over low heat until smooth and thickened.

  2. Remove from heat and gradually stir in egg yolks.

  3. Add the 1/4 cup butter, bit by bit, stirring constantly,

  4. Then gradually stir in lemon juice. Serve at once
