Delicious light & easy appetizer! Especially good with a hot mustard dip. Add your favorite spices to the breading for a personalized favorite. No one will ever know this is not fried.

Recipe Ingredients for Mock Fried Squash

4 small squash, yellow summer
1 tablespoon butter, melted
2 tablespoon milk, skim
4 tablespoon Bread crumbs (may substitute corn meal or any seasoned bread crumbs)
4 tablespoon cheese, romano grated

Recipe Directions for Mock Fried Squash

  1. Use 2 medium yellow summer squash (can substitute zucchini OR medium eggplant)

  2. Cut squash into 1/4-inch slices.(If using eggplant, Slice into 3/4-inch thick slices)

  3. Place in plastic bag,

  4. Add melted butter & milk to plastic bag

  5. Shake to coat thoroughly

  6. Into a separate bag place the cheese and bread crumbs

  7. Add coated vegetables slices to cheese and bread bag. Close bag

  8. Shake to coat.

  9. Lay parchment paper on cookie sheet

  10. Spray parchment with cooking spray

  11. Add the vegetables in a single layer.

  12. Bake in preheated 450 degree oven for 5-7 minutes, just until tender-crisp (for eggplant, preheat oven to 475 degrees)

  13. Turn slices over & Bake on other side for 5-7 minutes until crisp

  14. Remove from oven

  15. Serve warm
