Recipe Ingredients for Mock chicken pot pie

2 lb boneless skinless chicken breast
3 large carrots
3 celery stalks, large
1 onion
8 oz frozen peas
8 oz frozen corn
2 c Turkey broth
3 oz coconut milk
2 c Herb Seasoned Stuffing
1 c water
1 tsp salt
1 tsp pepper
1 tsp italian seasoning
1 tbsp olive oil
1 tbsp flour

Recipe Directions for Mock chicken pot pie

  1. Chop up carrots, celery, onion and chicken.

  2. Add olive oil to a deep skillet or to a pot. When it comes to temperature add chopped carrots, celery and onion. Saute until onions become translucent.

  3. Add chopped chicken, salt, pepper and seasoning. Continue cooking chicken until no pink shows on the outside. Add broth and coconut milk and stir until it comes to a boil. Shut heat off and add corn and peas.

  4. Place cooked mixture into a casserole dish.

  5. Prepare the stuffing using the 1 c water. flake stuffing mixture over chicken/veggie mix.

  6. Place in a 350 degree oven until bubbling hot, about 30 minutes.
