Weight Watchers' recipe for mini mocha muffins

Recipe Ingredients for Mocha Muffins

225 g self-raising flour
15 g cocoa powder
40 g light brown sugar
1 medium egg
40 ml sunflower oil
70 ml skim milk
1 tsp coffee, dissolved in 1 tbsp water

Recipe Directions for Mocha Muffins

  1. Sift flour and cocoa together.

  2. Stir in sugar.

  3. Beat together oil, milk, egg and coffee water.

  4. Mix into dry ingredients.

  5. Bake for 12 minutes at 180 or until risen.
