Recipe Ingredients for Mocha Espresso Cupcakes

1 cup sugar
3/4 cup flour
1/2 cup cocoa powder
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1 egg
1/2 cup milk
1/4 cup canola oil
1 teaspoon vanilla extract
1/2 cup hot coffee

Recipe Directions for Mocha Espresso Cupcakes

  1. Preheat the oven to 350F. Line a muffin pan with paper or foil baking cups.

  2. Combine the sugar, flour, cocoa powder, baking powder, baking soda, and salt in a large mixing bowl. Add the egg, milk, oil, and vanilla. Beat until smooth. Add the coffee, and mix until combined. The batter will be thin.

  3. Fill the baking cups 3/4 full. Bake for 20-25 minutes. Cool for 10 minutes in the pan. Remove the cupcakes from the pan and cool completely on a wire rack.
