Recipe Ingredients for Mocha Chocolate Chip Banana Muffins

1 1/4 c unsweetened applesauce
1 c Splenda
1/4 c Egg Beaters
3 ripe bananas
4 tbsp instant coffee granules, dissolved in 1 1/2 tbsp water
1 tsp vanilla extract
2 1/4 c Whole Wheat flour
1 tbsp Benefiber
1/4 tsp salt
1 tsp baking powder
1 tsp baking soda
1/3 c semisweet chocolate chips

Recipe Directions for Mocha Chocolate Chip Banana Muffins

  1. Preheat oven to 350 degrees F

  2. Blend oil and applesauce, sugar, egg, bananas, dissolved coffee, and vanilla in food processor for 2 minutes. Add flour, salt, baking powder, Benefiber and soda, and blend just until flour disappears. Add chocolate chips and mix in with wooden spoon. Spoon mixture into 15 to 18 paper-lined muffin cups.

  3. Bake for 25 minutes. Cool on wire racks.
