I found this great recipe on allrecipes.com and made some suggested alterations to make a little healthier. Can also substitute the oil with applesauce! The recipe calls to use in muffin tins but I made mine into two small loaves and it was excellent.

Recipe Ingredients for Mocha Chocolate Banana Bread

1 cup wheat flour
1/2 cup flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3 bananas, ripe and smashed
1/2 cup splenda
1 egg, lightly beaten
1/3 cup canola oil
1/3 cup brown sugar, packed
2 tbsp flour
1/2 tsp cinnamon
1/4 tsp nutmeg
1 tbsp butter, unsalted chilled
2 tbsp instant coffee granules
1 tsp vanilla extract
1/2 cup chocolate chips, mini

Recipe Directions for Mocha Chocolate Banana Bread

  1. Combine wheat flour, 1/2 cup white flour, nutmeg, baking powder, baking soda and salt.

  2. In another bowl combine bananas, egg, spleda, canola oil, coffee granules, and vanilla extract and beat until well blended.

  3. Add banana mixture to flour mixture until just moistened.

  4. Add the chocolate chips and stir just enough to even out chocolate chips in batter.

  5. Spoon into muffin cups or greased bread pans.

  6. In a small bow combine 2 Tbsp flour, brown sugar, cinnamon and butter. Mix with a pastry blender until it has the consistency of coarse cornmeal.

  7. Sprinkle topping over batter

  8. Bake ~25 mins or until a toothpick comes out clean if using small bread pans - if using muffin tins bake 18-20 mins or until a toothpick comes out clean.
