from vegan w/a vengeance (but I cut the sugar down to 1/2 cup instead of 3/4 cup)

Recipe Ingredients for Mocha Chip Muffins

1 1/2 cups all-purpose flour
1/2 cup sugar
1/4 cup cocoa powder
2 1/2 tsp baking powder
1/2 tsp salt
2 tsp instant coffee powder
1 cup soy milk
1/2 cup canola oil
3 tbsp yogurt, soy
1 tsp vanilla extract
1/2 cup chocolate chips

Recipe Directions for Mocha Chip Muffins

  1. Preheat oven to 375F. Lightly grease a twelve muffin tin

  2. In a large bowl, sift together flour, sugar, cocoa powder, baking powder, and salt, mis in the instant coffee powder

  3. In a separate bowl, whisk together the soy milk, oil, yogurt, and vanilla.

  4. Pour the wet ingredients into the dry and mix until the dry ingredients are moistened. Fold in the chocolate chips. Fill the muffin cups 3/4's full.

  5. Bake 18 - 20 mins, or until a toothpick or knife inserted into the center of one comes out clean.
