Brownies with a hint of coffee flavor. This recipe substitutes Splenda for half of the sugar, and we make 9 large brownies instead of 20 tiny ones.

Recipe Ingredients for Mocha Brownies

56 g baking chocolate
1/2 c butter, softened
2/3 c flour
1/2 tsp baking powder
1/4 tsp salt
2 eggs
1/2 c sugar
1/2 c Splenda
2 T coffee, grounds, instant
1 tsp vanilla

Recipe Directions for Mocha Brownies

  1. Melt chocolate with butter over low heat.

  2. Mix flour with baking powder and salt.

  3. Beat eggs well, then gradually beat in sugar and instant coffee. Blend in chocolate mixture and vanilla. Add flour mixture and mix well.

  4. Bake at 350°F for 25 minutes (for moist, chewy brownies) or about 30 minutes, or until cake tester or wooden pick inserted into center comes out clean (for cake-like brownies).

  5. Cool in pan. Cut into squares or rectangles.
