HIgh in fibre and protein, this yummy, spicy soup is heart-healthy and quick to make. Use low-sodium tomato juice to reduce the salt!

Recipe Ingredients for mmm...Minestrone

1 tablespoon Olive oil
1 medium onion, chopped
2 stalks celery, chopped
1 lb extra lean ground beef
3/4 teaspoon basil
3/4 teaspoon rosemary
3 cloves garlic, minced
1/4 teaspoon red pepper flakes
14 oz Kidney beans, drained and rinsed
48 oz tomato juice
8 oz spaghetti, dry

Recipe Directions for mmm...Minestrone

  1. Heat oil over medium heat in dutch oven or stock pot. Add onion, celery, carrot and garlic. Stir. Cook about 3 minutes. Add beef. Cook, breaking up with back of spoon until browned, about 5 minutes. Drain, if desired.

  2. Stir in basil, rosemary, red pepper flakes and beans. Add tomato juice. Bring to a boil. Add spaghetti.

  3. Reduce heat and simmer uncovered until spaghetti is tender, about 12-15 min.

  4. Enjoy!
