Recipe Ingredients for M+M Cookies!

1 c. whole-wheat flour, pastry
1/2 c. oat flour
6 tbsp. unsweetened cocoa, 2 Tbsp of it Dutch/dark
1/2 tsp. baking soda
1/2 tsp. salt
1/2 c. butter
2 oz. semisweet chocolate
2 oz. unsweetened chocolate
1 c. white sugar
1/2 c. brown sugar
2 eggs, 1 tsp. vanilla
2 c. chocolate chips, M&Ms (or Reese?s Pieces)

Recipe Directions for M+M Cookies!

  1. Preheat the oven to 325F. Line two large baking sheets with parchment paper. In a small mixing bowl, whisk together dry ingredients (flour through salt.) Set aside.

  2. In a small saucepan over medium heat, melt the butter. Add semi-sweet chocolate squares, stirring constantly until melted.

  3. Allow to cool slightly while combining sugars, eggs, and vanilla on medium speed of an electric mixer. Add chocolate to sugar mixture, mixing well until combined.

  4. Reduce speed to low and gradually add dry ingredients. Scrape clean mixer paddle and fold in M&Ms or Pieces.

  5. Using a 1- to 2-inch ice cream scoop, drop cookies about 2 inches apart on parchment paper. Flatten slightly with the greased bottom of a glass dipped in sugar.

  6. Bake for 12-15 minutes, until cookies are flat with slightly cracked surfaces. Slide parchment off of baking sheet and onto wire rack, allow cookies to cool. Store in a tightly sealed container at room temperature for up to 5 days. These also freeze well for months.
