Note: Use shredded cheese and canned enchilada sauce. You may want to add chopped onions to the meat while browning and 1 t of Cumin. (we don't like onions) A serving is 2 enchiladas.

Recipe Ingredients for MJ's Easy Enchiladas

16 corn tortillas
1 lb 95% lean ground beef
8 oz green chiles
16 oz fat free cheddar cheese
14 oz enchilada sauce

Recipe Directions for MJ's Easy Enchiladas

  1. Brown ground beef in skillet, drain excess fat.

  2. Add chiles to ground beef.

  3. Heat tortillas 6 at a time in microwave for 1 minute, allow to cool to touch.

  4. Spray 9" x 13" pan with Pam.

  5. Spread 1/4 cup (or so) of enchilada sauce in bottom of pan.

  6. Place about 2 T ground beef mixture in each tortilla, roll and place in pan. Repeat until filling is used up.

  7. Top with remaining sauce and the grated cheese.

  8. Bake in oven at 375 degrees until cheese is starting to brown and bubble. 30 to 40 minutes.
