Pureed lentils with onions and rice

Recipe Ingredients for Mjaddara

1 tablespoon canola oil
1 1/4 cup lentils
1/3 cup rice, white, short grain
1 large onion, chopped
1 1/3 cups water, (first amount)
1 teaspoon salt
1/3 cup water, (second amount)
1/4 teaspoon pepper, (or to taste)

Recipe Directions for Mjaddara

  1. Cook lentils for one hour in simmering water.

  2. Puree the cooked lentils in the food processor, set aside.

  3. Soak the rice in a bowl by adding boiling water to it; leave to soak for 30 minutes.

  4. Saute the onion in the canola oil in a deep pan on the stove until slightly colored and fragrant.

  5. Add the rice and first amount of water, bring to a boil, lower the heat to the minimum and let simmer covered for 20 minutes.

  6. Add the pureed lentils, salt, pepper and the second amount of water.

  7. Stir until combined.

  8. Pour into 4 plates and leave to set at room temperature for 15 minutes.

  9. This dish can be enjoyed lukewarm or even cold with cucumber pickles and/or a tangy green salad
